Everyone has an opinion.  Here’s mine.  You do you.

Godspeed if you want to read every article, get a dot notebook, and geek out on all things keto related.  Also, cool if you want to take your time and slowly limit carbs.  For example, removing sugar from your diet.

My real tip is to create a low-carb meal prep list or at least write a low-carb meal plan.  Otherwise, you may cheat on whatever goal you set when hungry.  Let’s stop the cheating and let’s commit to our healthy selves.

There will be times when you want to enjoy cooking and creating and there are times when you need something easy but with a touch of fuss.  That’s what this recipe is.  You can prep the low-carb sauce in advance.  It will last about a week in your refrigerator.  Then, all you need to do is build the sandwich.  What’s easier than that?

But what is a Croque Monsieur?

Wikipedia will tell you that croque means crunch and I think most of us know that monsieur means gentleman.  Or, at least Mister.  Aren’t translations funny?

The NY Times will sell you on this sandwich as falling under France’s bar and cafe food list (I can see this).

Are You Wondering About Low Carb Options At The Store? 

There are so many options for you at name-brand stores like Target, Walmart, Aldi’s, and often your biggest chain grocery store.  You’ll find many solutions online, too.  This will please you as you continue on your journey.  For now, we need low-carb bread.

The fancy restaurants no doubt serve their crunchy mister on artisan bread but we have some carb goals here so check out this recent find at Aldi’s.

You’ll also need a flour alternative for the bechamel.  I’ve tried this with both almond and coconut flour.  The coconut flour makes the bechamel sweet.  I’m not opposed to that but you may be so I wanted to mention that now.

The steps are so easy.  Make the bechamel sauce.  Let’s then butter the inside of 2 pieces of bread and layer cheese and ham.  Next, slather as much grainy mustard as you’d like.  The last step is to close the sandwich and drizzle the bechamel sauce on the top and garnish with as much parmesan cheese as you wish.

You’ll bake the sandwich for 5 minutes and then broil the cheesy top for a minute or two until golden.  Serve it with a simple salad and that’s it.  Beginning keto isn’t as hard as it sounds.

Low-Carb Croque Monsieur

Ingredients

Bechamel Sauce

  • 1/4 C Unsalted Butter
  • 1/4 C Almond Flour
  • 1.5 C HWC
  • Salt & Pepper, To Taste
  • 1/4 t Dijon Mustard
  • Dash of Nutmeg

Sandwich

  • 4 slices Keto Bread
  • 2-4 slices Ham
  • 2 - 4 slices Gruyere Cheese Comte and Emmental are also delicious
  • 2 T Whole Grain Mustard

Instructions

  • Pre-Heat the oven to 425 degrees
  • Prepare a baking sheet with parchment paper and set aside
  • Next, make the bechamel sauce by heating the butter in a pan over medium-high heat
  • Whisk in the flour stirring constantly for 2 - 3 minutes
  • Gradually add the heavy whipping cream whisking to combine. You may not need the full 1.5 cups. Continue adding and whisking until smooth and the sauce thickens
  • Remove the pan from the heat and whisk in the salt, pepper, dijon, and nutmeg and set aside
  • Butter 2 sides of bread and place, butter up, on the lined sheet pan
  • Layer the cheese, ham, and mustard, and close the sandwich with a piece of buttered bread, butter side down
  • Pour the bechamel sauce on the top piece of bread and garnish with parmesan cheese
  • Bake the sandwiches in the oven for 5 minutes and then broil the tops until golden

Notes

Serve with a simple side salad of Arugula, freshly squeezed lemon, olive oil, salt, and parmesan cheese.
