Simple Keto Chicken Recipes Should All Have A Short Grocery List 

This low-carb recipe is centered around items you can find at Trader Joe’s.  Unfortunately, for some of y’all, you don’t have a TJ’s near you (insert crying eyes here).  But, could you make the trek?  Are there any within driving distance, even if a bit further than you’d normally consider?

Check out the Trader Joe’s website for a location nearish you and pack those coolers.  It’s so worth it—pinky promise.

If you have a Trader Joe’s near you, here’s your low-carb shopping list:

  1. Chicken Shawarma
  2. Cauliflower Rice
  3. Low-Carb Milk Alternative or HWC
  4. Bag of Spinach
  5. Alfredo
  6. Parmesan Cheese

I forgot to put my milk of choice in this picture.  I used coconut milk.  Since we’re telling the truth here, I also used alfredo and parmesan that I already had.  Thus the lack of the Trader Joe’s logo on both of those.  But isn’t that the fun part of cooking?  To use up what we already have.

But, Not All Easy Weeknight Keto Dinners Must Come From Trader Joe’s.  Pfew – you can still make this!

In reviewing the shopping list above, I’m confident you’ll easily find numbers 2-6 at your local store.  The pre-marinated and packaged Chicken Shawarma may be all that isn’t readily available to you.

That’s ok!  No problem here – not today!  Let’s get what we need to make our own.

Do you have the Food Lover’s Companion book?  I know that we can access everything online, but there is something comforting to me about having cookbooks in the kitchen and I love the option of thumbing through pages of a food reference book.

It also makes me feel “Chefy”.  I’ve seen this book on the shelves in almost every Chef’s office including the one we passed on a galley tour when cruising on the Norwegian Cruise Line.   Pick up this cheap book (less than $20, I think) if you want to feel Chefy, too.

Inside the book, Shawarma is listed as A Middle Eastern version of the GYRO, shawarma consists of spiced, marinated lamb (sometimes chicken or veal) that has been molded around a vertical, rotating spit and slowly roasted.  Thin slices of the meat are shaved off as the spit keeps turning.  The hot meat is wrapped in LAVASH or PITA bread, spread with HUMMUS or TAHINI and topped with shredded vegetables.  In Turkey the shawarma is known as doner kebab.

So, let’s forgo the carb-heavy serving suggestion of traditional shawarma and create our own keto version.

Simple Keto Recipes For Beginners

Ok, now that we have the chicken out of the way, it’s time to get this easy low-carb dinner started.

I feel like I always write this, but this one is truly easy.  Maybe the easiest yet.

Assuming you’re going the Trader Joe’s route, pre-heat the oven to 400 degrees and place the chicken on a foil-lined sheet pan.

Next, I remove any obvious fat clumps.  This isn’t a necessary step.  It’s simply my preference.  But if you’re the same as me, handle this step on the sheet pan so as not to lose any of the yummy shawarma marinade.

Bake the chicken for 30 – 40 minutes or until the internal temperature reaches 165 degrees.

My Easy Weeknight Keto Dinners Often Include This:

Creamy Alfredo Rice may be the perfect keto side dish.  Along with being easy, it’s super delicious and versatile.  It will nicely compliment many of your favorite dishes.

Here, we’ll use it as our base and top it off with cubes of delicious chicken.

I find the cauliflower cools quickly so I wait until the chicken is fully cooked and let it rest while I prepare this final step that takes only minutes.

In a large skillet over medium-high heat, add the bag of cauliflower rice, 1/2 cup of (your choice) milk, 1/4 cup (or more – measure with your heart) of alfredo, and a bag of spinach.  You’ll cook this down stirring often until the spinach is fully wilted and mixed in.

Shawarma Chicken and Alfredo Cauliflower Rice

Ingredients

  • 1 pkg Shawarma Chicken From Trader Joe's
  • 1 12-oz Bag of Cauliflower Rice
  • 1 6-oz Bag of Spinach
  • 1/2 C Low-Carb Milk Alternative or HWC
  • 1/4 C Alfredo
  • Salt & Pepper, To Taste
  • Freshly Grated Parmesan, To Garnish

Instructions

  • Pre-heat oven to 400 degrees and bake the chicken on a foil-lined sheet pan for 30 - 40 minutes or until the internal temperature is 165 degrees
  • Remove the chicken from the oven and let it rest while you make the cauliflower rice
  • In a large skillet, add the cauliflower rice, spinach, milk alternative, and alfredo. Stir often until the spinach wilts and is evenly mixed throughout
  • Add salt and pepper to taste
  • Place a heaping mound of the alfredo cauliflower rice on the plate and top with cubed pieces of cooked chicken. Garnish with freshly grated parmesan cheese
