Instead of ignoring it, let’s just talk about the elephant in the room.  The pasta elephant.

But don’t dismiss the spinach just yet!  Spinach offers many health benefits like decreasing stress, improving eye health, and preventing heart disease and cancer.  Here’s some information from WebMD.

So that’s good news.  But wait – I have more good news!  Spinach, specifically in this dish, helps to cut some of the heavy creaminess.  It’s a delightful bright bite alongside the heavier sauced chicken.  Overall, one yummy forkful!

A quick Google search will yield many variations on how Alfredo sauce is created.  Here is how we’re going to make ours:

  1. Butter
  2. Garlic
  3. Cream Cheese
  4. Heavy Cream
  5. Parmesan Cheese
  6. Salt
  7. Pepper
  8. Nutmeg

Giada adds lemon juice and lemon zest.  The Pioneer Woman, Ree, doesn’t add garlic.  With this in mind, go ahead and make it the way you wish.  For me, that was adding a little bit of cream cheese as I really wanted a thick sauce.

Certainly, thick was achieved!  Moreover, it coated the chicken beautifully!

Ordinarily, in lieu of pasta, I would leave the chicken breast whole.  Or, I would create a stuffed chicken dish.  Check out this recent post for another keto Alfredo idea.

Seeing that the chicken in this dish would be served over a bed of spinach, I opted for thin breasts cut into chunks.  As a result, the chicken cooked quickly making this a fun dinner when you don’t have a lot of time to devote to your plate.  But I promise you, it will look like you put in a lot of work.

I love a pretty plate, don’t you?

We have created our creamy and thick sauce and we’ve quickly cooked off some chicken.  Finally, it’s time to get to the aforementioned spinach.

First, can we giggle at how much spinach it takes to make just a little bit when cooked down?  I used 2 larger bags to produce 2 small rings.  Second, can we acknowledge that the spinach ring looks like a wreath?  Food is fun.

Chicken Alfredo Over Wilted Spinach

Servings: 2

  • 1 # Thinly Sliced Chicken Breast
  • Salt, Pepper, Garlic Salt, Smoked Paprika, To Taste
  • 2 T Avocado Oil
  • 1/2 Stick of Butter
  • 2 Garlic Cloves, Minced
  • 2 oz Cream Cheese
  • 1 C Heavy Cream You may add another 1/2 cup based on your preference of sauce thickness
  • 1 C Parmesan Cheese, Shredded
  • Salt, Pepper, To Taste
  • 1/4 t Ground Nutmeg
  • 16 oz Fresh Spinach

  • Cut the chicken into cubes and sprinkle salt, pepper, garlic salt, and smoked paprika to taste and put into a skillet heated with 1 tablespoon of oil. Cook fully and set aside.
  • In the same skillet, melt the butter and garlic over medium heat. Add the cream cheese when the garlic becomes fragrant and stir in the heavy cream as the cream cheese melts.
  • Continue stirring making sure the sauce combines. Bring the sauce to the point of a few bubbles but not much more as the sauce can break. Turn off the heat once the cream cheese is fully melted and add the parmesan cheese.
  • Stir to combine and add the salt, pepper, and nutmeg. Let the sauce rest.
  • In another skillet, add the remaining oil and the spinach and heat over high until it's wilted to your preference.
  • Arrange the spinach like a wreath on 2 plates leaving the center open for the chicken. Add 1/2 to 3/4 cup of the alfredo to the chicken and combine. Reserve the remaining alfredo sauce for later use. Arrange the chicken in the center of the spinach wreath and serve.
