Instructions
Pre-Heat the oven to 425 degrees
Prepare a baking sheet with parchment paper and set aside
Next, make the bechamel sauce by heating the butter in a pan over medium-high heat
Whisk in the flour stirring constantly for 2 - 3 minutes
Gradually add the heavy whipping cream whisking to combine. You may not need the full 1.5 cups. Continue adding and whisking until smooth and the sauce thickens
Remove the pan from the heat and whisk in the salt, pepper, dijon, and nutmeg and set aside
Butter 2 sides of bread and place, butter up, on the lined sheet pan
Layer the cheese, ham, and mustard, and close the sandwich with a piece of buttered bread, butter side down
Pour the bechamel sauce on the top piece of bread and garnish with parmesan cheese
Bake the sandwiches in the oven for 5 minutes and then broil the tops until golden
Notes
Serve with a simple side salad of Arugula, freshly squeezed lemon, olive oil, salt, and parmesan cheese.
