Let’s address the marshmallow in the room.

It totally looks like mini toasted marshmallows in that picture, right?  In hindsight, I could have done this differently.  But in foresight, you’re glad I didn’t.  You just don’t know it yet.

It’s time to re-visit and indulge in the OG of keto sides for chicken, keto sides for steak, or a low-carb side to eat with anything you’d like.  The one, the only, Creamed Spinach.

Besides any excuse to enjoy this satisfying dish, it is also remarkably quick.  Like, super fast.

Fast and simple recipes hold a special place in my heart and in my weekly roundup.  We don’t always have time to spend in the kitchen and I don’t know if I hit my head or what – but I had forgotten all about this beauty.  Well, it’s time to bring her back!

There are many iterations of creamed spinach.  You may prefer it in different ways, too, based on your meal plan.  For example, maybe you go heavier on the garlic when you want to use it like a dip.  And maybe you go thinner when you want it as a side dish.

Food is your playground.  Whatever your preference, you can achieve this dish with minimal ingredients in just a few minutes.

This is how all simple low carb sides should be.

I’m always looking for ways to ‘play’ with my food so I went with a salty pungent garnish.  Besides being one of my favorites, this cheese makes everything better.

Ok, so I put a candle in that photo as there are so many blue cheese haters in the world.  I thought a little romantic ambiance while that glorious tub tries to seduce you back to the yummy side could work.

My apologies if it didn’t.

But, if you’re a lover of blue cheese, consider it as a garnish.  This dish practically begs for the attention of those little happy crumbles.  Once you try this, you’ll never go back!

Although word of caution: 3 minutes in the broiler made the crumbles look more like they needed a graham cracker and a nub of chocolate.  Oops.  But, I promise you, it’s oh-so-delicious.

Servings: 2 people

Ingredients

  • 3 T Unsalted Butter
  • 1 t Granulated Garlic Try 1 tablespoon for garlic lovers
  • 1 Bag of Baby Spinach
  • 1/4 C Heavy Whipping Cream Or up to 1/2 cup based on preference
  • 3 T Softened Cream Cheese Up to 8 (or 1/2 block) based on thickness preference
  • Salt & Pepper To Taste
  • 1/4 C Grated Parmesan Cheese
  • 1/4 C Crumbled Blue Cheese
  • Crushed Red Pepper To Taste

Instructions

  • In a saute pan over medium to medium-high heat, melt the butter and garlic until the garlic becomes fragrant
  • Add in the bag of washed spinach and stir to wilt the spinach
  • Next, add the heavy whipping cream and cream cheese adjusting the levels until you have the preferred consistency
  • Season with salt and pepper and turn off the heat
  • Stir in the parmesan cheese and pour the mixture into an oven-safe dish
  • Sprinkle the top with the blue cheese crumbles and broil for 2 - 3 minutes
  • Garnish with crushed red pepper flakes
