Some people can dive right into something new and keep up that inquisitive pace.  But if you’re like me, you’re the other group who need an easy entry.  One that’s not overwhelming or too much, too soon.

Luckily this recipe is going to work for both groups but it’s especially helpful if you’re the latter.  This low-carb chicken is so satisfying, so easy, and you won’t even miss the normally high-carb count with a simple recipe swap.  Moreover, you don’t need a lot of new products that you’ve yet to buy.  

Simple is the name of the game for the Lazy Keto Diet which typically limits carbs to 20 – 50 grams per day.  This is a great place to start!  Here’s a great article from People’s Choice Beef Jerky if you’d like to delve a little deeper.

There are many ways to enjoy chicken cutlets.  We’ll make an easy roasted tomato jam to top ours today and pair it with a simple arugula salad.

But once you master this preparation, you’ll surely want to come up with different presentations.  Will you top one with low-carb marinara and broil a little cheese similar to chicken parmesan?

Or maybe you’ll grab some keto bread and make a sandwich with your favorite fixings?  Oooh, what about chopping up the chicken to top a salad?  By the same token, you could add some chopped pieces to a low-carb tortilla making a quick BBQ chicken pizza.

Have you decided which version you’ll make?  If you’d like to try it as I did tonight, you’ll want the follow these steps. 

First, get your tomatoes in the oven.  To do so, we’ll grab some olive oil, garlic, and rosemary (dried or fresh).  Mix everything on a small sheet pan (hopefully yours is cleaner than mine 🤣) and bake it for 20 – 30 minutes.  Test the tomatoes and add a pinch of salt if desired.  This is such a fun item to have in the fridge for other uses.

Next, pound the chicken with a mallet or a rolling pin.  The best method for keeping your surface clean is to do this step in between cling wrap.  You can also buy thin cutlets from the butcher. 

Then, we’ll move on to the cheese and flour.  I used a cup of parmesan and half a cup of almond flour and sprinkled in salt, pepper, garlic powder, and Italian seasoning.  Measure the spices with your heart.

Your tomatoes should be done but keep the oven on.  We’re ready to cook the chicken.

Let’s press the chicken into our cheese and flour mixture.  Heat a skillet on the stovetop to medium-high.  Add a neutral oil and cook the chicken for about a minute and a half on each side.  Transfer the chicken to a rack-lined sheet pan and bake the chicken for 5 – 10 minutes or until the internal temperature is 165 degrees.

Finally, dress about a cup of arugula with some olive oil, salt, pepper, a squeeze or two of lemon, and mix it with some parmesan cheese.

Build your plate and you’ve just made a super easy and insanely delicious lazy keto recipe.  But, you’re no longer a beginner.  You’ve just leveled up!

Low-Carb Chicken Cutlet

Servings: 2



  • 1 Pint Grape or Cherry Tomatoes
  • 2 T Neutral Oil
  • 2 - 3 Garlic Cloves, Smashed
  • 1 - 2 T Rosemary, Chopped


  • 1 C Arugula
  • 1 T Olive Oil
  • 1 T Lemon Juice, Freshly Squeezed
  • Salt and Pepper, To Taste
  • Parmesan Cheese, To Taste


  • 1 # Chicken Breast, Pounded Thin
  • 1/2 C Almond Flour
  • 1 C Parmesan Cheese
  • Salt, Pepper, Garlic Salt, Italian Seasoning, To Taste
  • 3-4 T Neutral Oil



  • Preheat the oven to 425 degrees
  • On a small baking sheet, mix all of the ingredients and bake for 20 - 30 minutes
  • Add a pinch of salt if desired


  • Mix all of the ingredients


  • Combine the almond flour, parmesan cheese, and spices on a plate
  • Press both sides of the chicken into this mixture
  • Heat the oil over medium-high in a skillet and prepare a sheet pan with a metal rack
  • Cook the chicken for 90 seconds on each side being careful to not let the cheese and flour mixture burn. Transfer the chicken to the metal rack and bake in the oven at 425 degrees for 5 - 10 minutes or until the chicken is cooked through and 165 degrees
