Have you decided which version you’ll make? If you’d like to try it as I did tonight, you’ll want the follow these steps.
First, get your tomatoes in the oven. To do so, we’ll grab some olive oil, garlic, and rosemary (dried or fresh). Mix everything on a small sheet pan (hopefully yours is cleaner than mine 🤣) and bake it for 20 – 30 minutes. Test the tomatoes and add a pinch of salt if desired. This is such a fun item to have in the fridge for other uses.
Next, pound the chicken with a mallet or a rolling pin. The best method for keeping your surface clean is to do this step in between cling wrap. You can also buy thin cutlets from the butcher.
Then, we’ll move on to the cheese and flour. I used a cup of parmesan and half a cup of almond flour and sprinkled in salt, pepper, garlic powder, and Italian seasoning. Measure the spices with your heart.

Let’s press the chicken into our cheese and flour mixture. Heat a skillet on the stovetop to medium-high. Add a neutral oil and cook the chicken for about a minute and a half on each side. Transfer the chicken to a rack-lined sheet pan and bake the chicken for 5 – 10 minutes or until the internal temperature is 165 degrees.
Finally, dress about a cup of arugula with some olive oil, salt, pepper, a squeeze or two of lemon, and mix it with some parmesan cheese.

Low-Carb Chicken Cutlet
Ingredients
TOMATO JAM
- 1 Pint Grape or Cherry Tomatoes
- 2 T Neutral Oil
- 2 - 3 Garlic Cloves, Smashed
- 1 - 2 T Rosemary, Chopped
ARUGULA SALAD
- 1 C Arugula
- 1 T Olive Oil
- 1 T Lemon Juice, Freshly Squeezed
- Salt and Pepper, To Taste
- Parmesan Cheese, To Taste
CHICKEN CUTLET
- 1 # Chicken Breast, Pounded Thin
- 1/2 C Almond Flour
- 1 C Parmesan Cheese
- Salt, Pepper, Garlic Salt, Italian Seasoning, To Taste
- 3-4 T Neutral Oil
Instructions
TOMATO JAM
- Preheat the oven to 425 degrees
- On a small baking sheet, mix all of the ingredients and bake for 20 - 30 minutes
- Add a pinch of salt if desired
ARUGULA SALAD
- Mix all of the ingredients
CHICKEN CUTLET
- Combine the almond flour, parmesan cheese, and spices on a plate
- Press both sides of the chicken into this mixture
- Heat the oil over medium-high in a skillet and prepare a sheet pan with a metal rack
- Cook the chicken for 90 seconds on each side being careful to not let the cheese and flour mixture burn. Transfer the chicken to the metal rack and bake in the oven at 425 degrees for 5 - 10 minutes or until the chicken is cooked through and 165 degrees
