I was skeptical about this recipe as I don’t love egg yolk. I know, I know, but it’s not for me. Everyone has their thing and the last thing I want is something that tastes like it’s full of yolk. I’m an egg-white kind of girl.
In fact, I think I’m going to try this recipe again tomorrow with only egg whites to see how it looks and tastes. But, I’m here to report that this English Muffin is delightful. So let’s get into it.
Keto English Muffin
In a bowl, add 1 tablespoon melted butter, 3 tablespoons almond flour, 1 tablespoon coconut flour (optional, but I like the sweetness), 1/2 teaspoon baking soda, and 1 egg. You can also add salt to the mixture. It definitely needs it, but I add it when I’m ready to make my breakfast sandwich so I usually skip it during the cooking process.
Mix it all together and try to keep your dough level. Otherwise, it may not cook evenly enough to cut in half in a way that you’ll be happy using it as a sandwich. You’ll end up with a thinner side to one of the cut pieces. But don’t worry if that happens. I’m sure you’ll find another way to enjoy it, wink wink.
The cooking time is the most surprising part of this recipe. 90 seconds is all it should take. Everyone’s microwave is different so play around with this until you you’re happy but don’t go over 2 minutes. I’ve found that the edges of the muffin become super dry closer to the 2-minute mark.
The melted butter from the first step of the dough should be enough to grease the bowl meaning the muffin will fall out with minimal effort. You may need to use a knife to loosen the sides. Let the muffin cool for a minute or so before cutting it.
