Let’s face it.  Although many grocery stores carry low carb bread, they don’t carry a low-cost price.  I paid over $7 at Aldi’s and almost $9 at another store.  While I may be paying in-city costs and you can find your keto bread for cheaper – making your own saves money.

Making your own also lets you control what goes into your bread. 

Plus, there’s the added benefit of the cooking time.  90 seconds.  You really can’t beat that!

First, let’s discuss what exactly keto bread is. 

The short answer is one made with keto-friendly ingredients such as this recipe which includes almond flour and coconut flour.  The simpler answer is whatever fits into your daily carb goals.

Here are 4 reasons I think you’ll love this recipe:

  1. IMPROMPTU – You (probably) will always have the ingredients needed for this recipe on hand.  You don’t have to remember to grab keto bread from the store.
  2. CONTROL – You decide the flavors and the carb total.  For example, add garlic powder.  Especially if you’re in the mood for English Muffin Pizzas.  Or omit the coconut flour to reduce the carb total to fit into your daily totals.

Yes!  The answer is yes!  However, I’m not sure that it’s easier than buying English Muffins.  But items on hand that mean a lower cost per muffin, the control of flavors, and the simple and fast preparation win for me every time.

Almond flour is low-carb and it’s gluten-free.  It also happens to be delicious.  Of course, this keto English Muffin will not taste exactly like the one you grew up eating or even the one you may have enjoyed last week.  But, you’re not going to be upset with this dupe.

In my opinion, the fun part of transitioning to a low-carb lifestyle was the experimentation with different items in familiar foods.  Play with your food and you may be surprised that you prefer the new versions.   


I was skeptical about this recipe as I don’t love egg yolk.  I know, I know, but it’s not for me.  Everyone has their thing and the last thing I want is something that tastes like it’s full of yolk.  I’m an egg-white kind of girl.

In fact, I think I’m going to try this recipe again tomorrow with only egg whites to see how it looks and tastes.  But, I’m here to report that this English Muffin is delightful.  So let’s get into it.

Keto English Muffin

In a bowl, add 1 tablespoon melted butter, 3 tablespoons almond flour, 1 tablespoon coconut flour (optional, but I like the sweetness), 1/2 teaspoon baking soda, and 1 egg.  You can also add salt to the mixture.  It definitely needs it, but I add it when I’m ready to make my breakfast sandwich so I usually skip it during the cooking process.

Mix it all together and try to keep your dough level.  Otherwise, it may not cook evenly enough to cut in half in a way that you’ll be happy using it as a sandwich.  You’ll end up with a thinner side to one of the cut pieces.  But don’t worry if that happens.  I’m sure you’ll find another way to enjoy it, wink wink.

The cooking time is the most surprising part of this recipe.  90 seconds is all it should take.  Everyone’s microwave is different so play around with this until you you’re happy but don’t go over 2 minutes.  I’ve found that the edges of the muffin become super dry closer to the 2-minute mark.

The melted butter from the first step of the dough should be enough to grease the bowl meaning the muffin will fall out with minimal effort.  You may need to use a knife to loosen the sides.  Let the muffin cool for a minute or so before cutting it.

Low Carb English Muffin

Servings: 1


  • 1 T Melted Butter
  • 3 T Almond Flour
  • 1 T Coconut Flour
  • 1/2 t Baking Soda
  • 1 Egg
  • Salt, To Taste


  • Melt the butter in an oven-safe bowl
  • Next, add the dry ingredients and mix
  • Finally, add the egg and mix well keeping the dough as level as possible
