Let’s loosely call this a low-carb Mexican Cheeseburger Taquito.  Or, a Keto Taquito.

  I baked these but back in the day, when I was first introduced to the Taquito, it was fried.  You could also try this keto lunch straight from the air fryer.

Regardless of your method, put in a little prep work now and have everything you need for quick and easy low-carb lunches this week!

Surely, if you’ve been following a low-carb diet for a hot minute or a long time, you’re well-versed in all things involving the carb-friendly tortilla.  They are easy to find at most grocery stores, they’re fun to use in different ways (I’m thinking about this play on lasagna), and they hold up pretty well when considering leftovers.

Leftovers are the goal here.  That’s what makes this the perfect recipe if you’re after quick low-carb lunches this week.


But what is a taquito, you may be wondering.

I worked at a local Mexican restaurant when I was 20.  Up until that point, I had only enjoyed the classics at my house.  Taco Tuesday from the boxed kit and nachos from the microwave.  I know, I know.  I’m embarrassed to write that last one.

So you can imagine my delight when a rolled tortilla full of slow-cooked beef mixed with spices, onions, and cheese emerged from the fryer.  Chef then arranged it on a plate for me to try next to a dollop of sour cream and a ramekin of salsa.  I was instructed to break the taquito in half and dip it into the sour cream and then the salsa.

It was glorious.

The following is what I’d like to tell you if you want a quick keto lunch at home.


I guess it wouldn’t be quick if we were going to slow-cook meat (albeit lovingly) over hours and hours.  But you should do just that if the mood strikes.

That’s the beauty of the taquito.  You can do whatever you want including different protein sources.  How good would a sugar-free BBQ chicken one be with crunchy red onion or pickles?  I think I know the answer.

In this case, I wanted uber-easy and classic.

I mixed ground beef with 2 tablespoons of grated onion and 2 tablespoons of taco seasoning.  That’s it.  Nice and simple.  Next, using the ever-classy term when referring to food, I formed logs on a foil-lined sheet pan.  Then dusted those logs with another tablespoon of taco seasoning and baked ’em till they were cooked.

Side Note:  Check your taco seasoning for hidden carbs.  I’ve mistakenly used some before with 6 carbs per tablespoon.  No, thanks!

Remove the fully cooked meat and place to the side to cool a bit but don’t shut off the oven just yet.

Not the most beautiful, but it’s going to taste delicious.


The last step is to cut your meat logs in half, vertically and assemble your little taquitos with cheese and bake them until crispy.  We want the shell to hold up when we’re ready to reheat them.  It only takes a quick 30 seconds in the microwave.  Tomorrow you is going to be happy that today you prepped these little low-carb nuggets.

Seriously, make these in advance and store them in the refrigerator for a fast lunch.  They are the quickest Keto Taquitos!

Check out the following images and I paired my lunch with sour cream and Tabasco because I’m obsessed with that flavor combination for dipping.  Then I added some sliced cucumbers as a side dish.  I used the Trader Joe’s knock-off Tajin and I also can’t get enough of the Elote seasoning.  Garnish the cukes with some fresh lime juice and it’s a wrap.

Keto Taquito

Servings: 6


  • 1.5 # Ground Beef
  • 2 T Grated Onion
  • 3 T Taco Seasoning
  • Cheese Measure with your heart
  • 6 Low Carb Tortillas
  • Cucumber Sliced
  • Tajin Measure with your heart
  • Lime Wedge


  • Preheat the oven to 375 degrees
  • In a bowl, combine the ground beef, grated onion, and 2 tablespoons of taco seasoning
  • Roll the meat mixture into logs and place on a foil-lined baking sheet. Sprinkle the remaining taco seasoning on top and bake for 15 - 20 minutes or until the ground beef is fully cooked
  • Let the meat cool a bit and then slice each in half vertically
  • Slice the tortillas in half as well
  • To assemble, place the cheese and meat on the tortilla half and roll until closed. Please each roll back on the sheet pan that's been drained of the fat and bake in the oven, seam side down until the tortilla shell is crispy (8 - 10 minutes)
  • Remove from the oven and serve immediately, or let cool and wrap to store in the refrigerator. Heat each taquito for 30 seconds in the microwave and serve with sliced cucumbers with fresh lime juice and tajin seasoning along with sour cream and Tobasco dipping sauce
