Keto Cooking Can Be Whatever You Want It To Be
By all means, low-carb tortillas are not a substitute if you were a former pasta person. For one thing, the thickness of a tortilla is not comparable to a lasagna noodle. However, you may be surprised to learn that they do plump up a bit as they cook, especially the base tortilla that sits in the homemade marina sauce. That is a little silver lining moment. But, please don’t come from me if the following is what you’re expecting.

Here’s some good news. While this is certainly different visually, the flavor is definitely there. I went with a creamier version. You can add more ricotta as I did here for that creamy finish. On the other hand, you can add more red sauce if that’s what you like. I used a 14.1-ounce can for this dish. Pick up 2 cans if you want more!

To that end, let’s outline a quick red sauce for our keto cooking adventure.
First, pick up a can of whole tomatoes. I went with this can from Trader Joe’s.
In the event that you don’t know, San Marzano tomatoes are the best. Here’s an article from Martha Stewart explaining why. I assume marzanino is a marketing play on the ever-popular San Marzano. But you know the old adage about assuming. If you know, leave a comment. Regardless, this tomato did just fine for the one-stop shopping I was after.
Next, add some oil to a pot and add a clove of crushed garlic and a pinch of red pepper flakes once the oil is hot. Be careful! We don’t want the garlic to burn so have your can of marzanino / marzano tomatoes at the ready. Add the can and 1/2 can of water to the pot when you see the garlic turn a light brown.
I always add a big pinch of salt and sometimes a good tablespoon of garlic powder. Stir to combine and reduce the heat to a gentle simmer. I usually let this go for about 20 minutes. You’ll stir again at this point and add as much basil as you’d like and let it go another 10 – 20 minutes.
Finally, you’ll know it’s good when you’re happy with however thick or thin you like your sauce.
Easy Weeknight Keto Dinners
I try to make my own sauce whenever I have the time. This way, I know that sugar has not made its way into it. But there are plenty of carb-friendly red sauces out there if you want to skip a step. The most popular one, I think, is Rao’s.
After your sauce decision is your protein choice. Here, I went with a pound of ground turkey that I lightly seasoned with garlic powder and onion salt. I used just shy of the full pound when cooked. I had about 1/2 of a cup remaining which I happily used the following day in an omelette.
Next, get out your low-carb tortillas, ricotta cheese, and freshly grated mozzarella cheese.
The final step is building this delicious keto lasagna dupe.
Layer ricotta cheese, ground turkey (or whichever meat you prefer), sauce, and mozzarella cheese as you wish until you fill the pie pan. I used 1 layer of ricotta inside and then again on top leaving more room for the meat. I prefer a protein-heavy meal. Top the last tortilla with sauce and cheese and bake it uncovered for 20 – 30 minutes in a 375-degree oven.

Keto Ground Turkey Lasagna
Ingredients
Homemade Sauce
- 1 14.1 oz can whole tomatoes
- 3 T olive oil
- 2 garlic cloves, crushed
- red pepper flakes, pinch
- salt, to taste
- 1 handful of fresh basil, chopped or torn
Assembly
- 1 # cooked ground turkey season as you wish
- 4 low carb tortillas less or more based on the size of your pie pan
- 1 C ricotta cheese
- 2 C mozzarella, shredded
Instructions
Homemade Sauce
- Add the oil to a skillet over medium-high heat
- Add the garlic and crushed red pepper flakes and simmer until the garlic is browned. Do not let the garlic burn and add the can of tomatoes and 1/2 can of water. Mix well to combine and reduce heat to low and let the sauce simmer for 20 minutes
- Using a fork, mash any tomato chunks and add in the basil stirring well to combine. Let the sauce simmer for another 10 - 20 minutes
- Meanwhile, prepare the ground turkey in a skillet cooking it through and adding any seasoning you wish like garlic salt or powder, onion salt, Italian seasoning, salt, and pepper
- Pre-heat the oven to 375 degrees
- To a pie pan, add a heaping scoop of your tomato sauce and top with a tortilla. Next, layer the remaining ingredients as you wish creating 3 to 4 more layers before ultimately topping the last tortilla with sauce and cheese
- Bake for 20 - 30 minutes or until the cheese if golden brown
