Low Carb Family Meals; Crockpot Edition

The crock-pot, crock pot, crockpot or slow cooker (whatever you call it) has an interesting past.  Picture it, Lithuania, early 1900’s and Irving Nachumsohn learned of a Sabbath workaround from a relative.

Cooking is one of the 39 prohibited activities on the Sabbath.  In anticipation of this, families would place meat, beans and veggies in their crocks and before nightfall on Friday, they would head to the local bakery.  The fire in the ovens were extinguished, but the stone structure retained enough heat to cook the ingredients in a low and slow process producing a stew called cholent.  This would leave a freshly made stew for a family the next day (Sabbath).

Irving had an inventor’s brain and also saw the great benefit of this process during the hot months.  This style of cooking meant you didn’t have to turn on the stove making the kitchen an inferno.  So, he designed a version mimicking the process in the bakery that could be achieved at home.  After submitting a patent in 1936 for his design, he was rewarded in 1940 and received the patent that we have been turning to for over 80 years.

This tool is a staple for smart cooks, busy cooks and those that know the value of unattended cooking.

Fast Low Carb Family Meals

The crockpot usually wins in the easy department, but not the speedy one.  So it’s not going to work when time, or lack thereof, is an issue.

I’ve written about the whole chicken before.  For some reason, people think it’s harder than it really is.  It’s not!  Do you know how relatively quick, easy, and delicious it is to cook a whole chicken?  You only need to worry about low carb sides.  Trader Joe’s can help you with that.  They have excellent sides!

 

 

Your new favorite whole chicken recipe will cook for an hour and serve 2 – 4  from a 2 to 3 pound chicken or 4 – 8 from two 2 to 3 pound chickens.

Don’t you think an hour with minimal effort is perfect?

I picture your low carb night to look like this:

  • Arrive home from work, turn on oven
  • Change into comfy clothes
  • Put chicken(s) into the oven
  • Make a drinky poo (see related post below for keto friendly adult beverages)
  • Eventually address your sides, again Mr. Trader Joe makes that super simple
  • An hour later, you’re laughing with the family and gossiping about the day

Are you ready to master Thomas Keller’s Chicken Recipe?  Yes!  And, you’re going to be so excited that you tried this!  First, set the oven to 450 degrees.  Then rinse your one 2 to 3 pound whole chicken.  Next, pat that baby dry both inside and out.  You’ll achieve a crispy skin this way.  Do you know how to truss a bird?  Check out this link for help and do that to your chicken after putting salt and pepper in the cavity.

So easy, right?  Now salt the outside of the chicken and add cracked pepper.  Finally, place the chicken in  a roasting pan, or I use a lined baking sheet, and leave it alone for 50 – 60 minutes, until it’s cooked to 185 degrees.

You’ll then remove the bird and let it rest.

Low Carb Family Meal Prep

Are you on Tiktok?  If so, shameless plug, check out the pork dinner I’m making tonight.  It’s soooo good!  But my purpose in really asking is the current trend of prepping meals for busy households during the school season.

I’m obsessed with this idea.  One lady that I follow made Freezer Breakfast Sandwiches.  She put a dozen eggs into a bowl with a cup of heavy whipping cream, 1/2 stick of melted butter and seasoned with salt, pepper, and dried parsley.  Next, she whisked everything and poured onto a greased sheet pan (with sides of course!).

You’ll want your oven at 375 degrees and place that sheet pan on the bottom rack.  The eggs have finished cooking when the edges are slightly brown.

While your eggs are in the oven, you can prepare sausage or bacon or really whatever you’d like along with a slice of cheese to top the eggs.

Are you low carb or keto?  That will change what type of bread you use.  Stay within your carbs with a yummy bread of your choice and build the sandwiches cutting the eggs to match the bread size.  She recommends you toast the bread.

You can find low carb english muffins and bagels online!

Complete the sandwich with cheese and toppings, wrap in foil, label, date and freeze them.  And, reheat in the oven when hungry

This has to be the easiest family breakfast meal!
