Keto Cauliflower Casserole
Ingredients
- 2 16 oz Frozen Cauliflower
- 3 Garlic Cloves
- 6 T Butter, Unsalted
- 1/2 C Heavy Whipping Cream
- 6 oz Softened Cream Cheese
- Heavy Pinch of Salt & Pepper
- 5 oz Italian Blend Cheese
- 4 T Butter, Unsalted
- 1 C Keto Breadcrumbs
- 1 T Garlic Powder, Optional
Instructions
- Preheat the oven to 400 degrees.
- Heat the cauliflower in the microwave in 90-second intervals until it reaches your desired firmness or softness. More time will result in a smoother consistency, less time will produce a grainy result.
- In a food processor, add the cauliflower, garlic cloves, butter, heavy whipping cream, softened cream cheese, and salt and pepper. Blend until fully combined.
- Cover the bottom of an oven-safe dish with the cauliflower mixture and sprinkle cheese. Repeat these steps until the mixture and the cheese are used.
- In a skillet, heat 4 tablespoons of butter, and when fully melted, add the breadcrumbs. Mix to combine fully.
- Top the cauliflower mixture with the breadcrumbs and bake in the oven for 30 minutes or until the edges are bubbling and the topping is browned.
