If you’re on the cauliflower rice train, you’re going to love this Keto Thanksgiving Side Dish.

You’ll also love it if you enjoy a creamy and cheesy casserole with a crispy breadcrumb topping.  Cut this recipe in half and enjoy it all year long – we don’t need to only wait for Thanksgiving to enjoy this low-carb side dish.

3 Easy Steps To The Best Keto Side Dish

Step One:  Get out your food processor.  We’re going to blend everything in this one kitchen tool.

The food processor is a gift in the kitchen of any busy cook.  This is especially true if you have children.  Or, if on a busy holiday like Thanksgiving, you need something easy.  If you don’t have one, this is your sign.

Head to your local Walmart or Target and peruse the aisles.  You’re sure to find a few options from less expensive to more expensive.  If you’d like a little more information, check out this post from the Food Network: 7 Best Food Processors, Tested by Food Network Kitchen

Low carb vegetable side dishes should be as easy as the food processor.

One of the best parts of this dish is the bag of frozen cauliflower.  There isn’t a need to grapple with a full head of cauliflower unless you’d like to.  It’s dealer’s choice.  But here’s a little fun FYI – the bag(s) fit perfectly in the microwave.  No need to steam your labor-intensive full head of cauliflower.

Easy keto bread crumbs.

During the holidays, I always have breadcrumbs on hand.  Check out this Low Carb Sausage Stuffing recipe if you’d like a quick peek at drying bread in the oven.  Which brings us to the next step.

Step Two: Combine butter and your bread crumbs (previously pulsed in the same food processor – see, you need one!) until fully coated.

Finally, Step Three: Layer the cauliflower mixture in an oven-safe dish with handfuls of the cheese of your choice.  Then top the last layer with your low-carb bread crumbs and bake it.

That’s it!

Keto Cauliflower Casserole

  • 2 16 oz Frozen Cauliflower
  • 3 Garlic Cloves
  • 6 T Butter, Unsalted
  • 1/2 C Heavy Whipping Cream
  • 6 oz Softened Cream Cheese
  • Heavy Pinch of Salt & Pepper
  • 5 oz Italian Blend Cheese
  • 4 T Butter, Unsalted
  • 1 C Keto Breadcrumbs
  • 1 T Garlic Powder, Optional

  • Preheat the oven to 400 degrees.
  • Heat the cauliflower in the microwave in 90-second intervals until it reaches your desired firmness or softness. More time will result in a smoother consistency, less time will produce a grainy result.
  • In a food processor, add the cauliflower, garlic cloves, butter, heavy whipping cream, softened cream cheese, and salt and pepper. Blend until fully combined.
  • Cover the bottom of an oven-safe dish with the cauliflower mixture and sprinkle cheese. Repeat these steps until the mixture and the cheese are used.
  • In a skillet, heat 4 tablespoons of butter, and when fully melted, add the breadcrumbs. Mix to combine fully.
  • Top the cauliflower mixture with the breadcrumbs and bake in the oven for 30 minutes or until the edges are bubbling and the topping is browned.
