Do you ever find yourself uninspired? Or perhaps, overwhelmed when thinking about what you’re going to make for your next meal?
Life is busy and you have so much on your plate that you don’t always know what you want to put on your literal plate. There are so many options online, so many recipes that you’ve already tried.
Sometimes, I just can’t decide what I want.
That’s when I turn to my Gram’s old recipe box. She left us in 2006, but having her recipes close at hand always makes me feel like she’s nearby.
Lazy Keto Chicken
Chicken is a staple in many homes, even if you’re not following a low-carb lifestyle. If you’re like me, you always have chicken in the fridge.
One of my go-to meals is cajun chicken with a veggie side dish. It’s a weeknight staple for me. I had a cup and a half to use which is about 3 smaller breasts that I cut into cubes.
Since I settled on a zucchini quiche as inspiration, I decided adding more protein was a good idea and would be a yummy addition. That’s the beauty of a quiche. It can act as a kitchen sink type of meal. It can handle an array of ingredients.

Secret Low Carb Ingredient
Did you catch it? Did you see Bisquick as an ingredient in that recipe card?
I’ve never heard of putting Bisquick into a quiche. I’ve never heard of putting Bisquick into anything but pancakes. And I don’t like pancakes. So my knowledge of this product is limited. Very limited.
Am I the only one who was perplexed by adding a powdered mix to a quiche? The answer is yes! A quick search led me to the super popular Impossible Quiche Recipe that was once printed on the actual Bisquick box.

That’s why the recipe was called “impossible” because it creates a crust-like alternative while it bakes. Still not low-carb, but approachable. Why, you ask? Because you can find low-carb recipes to mimic Bisquick or you can buy a low-carb version.

Not all recipes must be followed to the letter. There are many creative changes one can make to certain recipes to personalize them. This is that recipe. I followed along with my Grandmother’s instructions while using what I had in the house and tweaking some things along the way. Here’s my highlight reel. How would you make this?

Shredding the zucchini took no time at all. The onion was also a breeze. Clean-up is as simple as you want it to be, too. You need this tool!
The recipe makes enough for 2 vessels.
So, the zucchini and the onion keep this dish juicy and it smelled so sweet during the baking process. I cannot wait to try this again. I saw an Impossible Quiche version with ground beef. I’ll be making that next weekend. This was easy and delicious, and it will definitely make an appearance on my table again very soon.

Impossible Lazy Keto Chicken and Zucchini Quiche
Ingredients
- 1.5 C Cubed Cooked Chicken
- 3 C Shredded Zucchini Do not press to remove any moisture
- 1 C Grated Sweet Onion
- 3/4 C Grated Asiago Cheese
- 6 Eggs Slightly beaten
- 1/2 C Avocado Oil
- 1 pkg Shredded Sharp Cheddar Cheese
- 2 T Garlic Powder
- Salt and Pepper to Taste
Instructions
- Pre-Heat the oven to 350 degrees
- Grease 2 pie pans or 1 large cooking vessel
- Combine all of the ingredients in a large mixing bowl and pour it into the cooking vessel(s)
- Bake uncovered for 35 to 40 minutes or until the top is golden brown
- Let the quiche rest for 5 to 10 minutes before service
