Baby Chicken Chimichanga
- Microwave a low carb tortilla for 10 seconds making it easier to roll without developing cracks
- To the center, add a small heaping of rotisserie chicken
- Season as you wish
- Add a touch of diced onion and if you’re fancy, roasted garlic
- Cover with shredded cheese and roll your little baby, burrito style
- Stick 2 toothpicks in each end securing the roll and place on a greased sheet pan
- Cover with more cheese and or dry seasoning and bake in a 350 degree oven for 15 minutes
- Meanwhile, add Tabasco to sour cream and serve as a dipping sauce
- And, make that salad or some other form of happiness for your body

- A Full Head Of Cauliflower, cut into bite size pieces and par cooked
- Chopped Rotisserie Chicken, you decide how much
- Onion Salt, Garlic Powder and Pepper
- Shredded Mozzarella Cheese
- Alfredo Sauce, low carb!
Now let’s make it:
- Preheat Oven to 350 Degrees
- Use Spray Oil to Coat a Large Baking Dish
- In a Large Bowl, Gently Toss the Cauliflower, Chicken and Dry Seasoning
- In a Pot, Heat the Alfredo Sauce
- Next, Put 1/3 of the Alfredo Sauce on the Bottom of your Baking Dish
- Add Half of the Cauliflower and Chicken, Mozzarella Cheese and Repeat
- Use Remaining 1/3 of Alfredo Sauce to the Top and Sprinkle with More Mozzarella Cheese
