One Pan Keto Breakfast – Healthy, Simple Cheeseburger Omelet
If you’re anything like me, easy is the name of the game on weekday mornings. Breakfast should be quick to put together and most importantly, it should be both healthy and filling.
Starting off your day this way will lead you to success. You should find that you’re less hungry at lunch time and maybe even thinking about lunch later than normal. The portion size is impressive, I think, so you shouldn’t feel a sense of lacking.
You’ll especially like this recipe if you’re trying intermittent fasting. This is my go – to breakfast when I’m only eating 2 meals a day.
Whether you’re doing keto, lazy keto or dirty lazy keto, this simple recipe fits the bill when you’re looking for breakfast ideas.
Easy Keto Breakfast Ideas
Well, normally, they begin with a bit of planning. Here’s what you’ll need for your cheeseburger omelet:
- 2 pound of ground beef
- 2 dozen eggs or a carton of liquid egg whites
- 3 – 4 green peppers
- A carton of cherry tomatoes
- 1 medium onion
- 1 bag of spinach
- 2 blocks of cheddar cheese (or buy pre-shredded in a bag)
Here’s what you’ll do to prep your ingredients:
- Cook the ground beef and season as you wish. Drain any extra fat / grease, let cool and place in an airtight container to store in the refrigerator
- Dice the green peppers and also store in the ‘fridge’ in a ziplock bag or container
- Wash and store the cherry tomatoes
- Dice a medium onion and store in the ‘fridge’ in a ziplock bag or container
- Wash your spinach and store as you like, I keep mine in the bag and throw it in the veggie crisper area of the refrigerator
- Shred your cheddar cheese

Healthy, Simple Cheeseburger Omelet Recipe:
In a skillet, heat your oil. Make sure to keep track of all of your ingredients allowing you to (obviously) know the number of carbs to stay on your daily plan. But, also to see what you want to shift or change as you prefect this recipe. For example, I often omitted the onion and tomatoes based on what else I planned to eat that day.
Ok, so your oil is ready? Great! Next, add 1/4 c of the pre-cooked beef and move it off to one side of the pan creating a half moon. On the other side of the pan, pour 1 c of egg whites. You’ll want to lift and dip the pan a bit making sure the eggs spread over the full circumference of the pan.
Your next step is to add the veggies and I covered the pan for a bit so the top of the eggs would cook making it much easier to flip. Then, add your cheese and gently fold one half of mixture over on to itself creating a half moon.
Seriously, watch the video – it’s so easy and will make so much sense.
Flip it once or twice to your desired ‘doneness’ and that’s it.
Variation Tip: I was too lazy to go to the store for ground beef so I shredded a block of tofu, seasoned it like it was a hamburger and used 1/2 cup in place of 1/4 c of beef. And, it was incredible!
