We like honesty here.  You’ll want this item on hand to make the recipe as quick and easy as possible.  Without it, you’ll add another step increasing the cooking time.


You can find this product online at Amazon (of course) as well as at Walmart and Target, to name a few.

If you’re reading this at work thinking about dinner tonight, well, you may have an issue finding sugar-free maple syrup on your commute home.  But there’s no need to worry!  Here is a recipe that you can use to mimic the maple syrup flavor for that dijon cream sauce.


What You Will Need:
2 C Water, Divided
1.5 t Xanthan Gum
2/3 C Keto Sugar (use keto brown sugar for that darker maple syrup look)
1/4 t Salt
1.5 T Maple Extract
1 t Butter Extract

What You Will Do:
First, mix 1/4 cup of the water with the xanthan gum and let it sit to thicken.  Next, grab your saucepan and add the remaining water, keto sugar, and salt.  You’ll then heat this to a simmer, not a full-on boil, and then remove your saucepan from the heat altogether.

Add your xanthan slurry and whisk well.  Next, add the extracts.  Give it all a final mixy mix and let it cool.  Your “maple syrup” will continue to thicken as it cools.

For future reference, your new maple syrup will last about 4 weeks on the counter and up to 6 months in your fridge.  In an air-tight container, of course.  This is excellent news as I know you’ll make the Keto Pork Milanese again.  Or, maybe you’ll try it with chicken?  I did and it was so good with the maple dijon cream sauce.

Have you ever made fried chicken?  Many recipes call for the chicken to sit in buttermilk for a while and I was on the hunt for a quick dinner.  To be honest, frying is an entire process for me.  Do you ever use too much oil?  I do and I’m not a fan.  Deep frying is an art I have yet to master.


I’ve been called lazy before and I embrace it openly.  Laziness served me well in this case.  I thought about classic dishes that could mimic the crunch of fried chicken but also ones that could make it to the table quickly and with keto ingredients in mind.

Milanese it is!  But, I wasn’t looking for lemon wedges.  I wanted maple dijon cream sauce.  A perfect plate!

Dinner, in my opinion, should be whatever you want it to be.  There is a time and a place for every level of cooking.  But, there is always a time for simplicity in my kitchen and especially on a weeknight.

Keto Pork Milanese

This classic dish is made keto-friendly with a fun twist. Maple dijon cream sauce!

  • 2 C Heavy Cream
  • 1 C Sugar-Free Maple Syrup See the recipe above to make a mock version
  • 1/2 C Dijon Mustard
  • 1 t Salt
  • 1/2 t White Pepper
  • 1.5 # Boneless Pork Chops, Pounded 1/3 inch thick
  • 1 C Keto Bread Crumbs
  • 3/4 C Shredded Parmesan Cheese
  • 2 EA Eggs
  • Salt & Pepper, To Taste
  • Olive Oil, For Shallow Fry
  • Butter, For Shallow Fry


  • Pre-heat the oven with a sheet pan to 225 degrees
  • Combine cream and maple syrup in a medium saucepan and bring to a gentle simmer until it reduces by 1/3 and thickens
  • Whisk in the dijon, salt, and white pepper and let the sauce simmer gently for another 15 minutes
  • Season both sides of the pork chops with salt and pepper
  • In a bowl, mix the keto bread crumbs and the cheese adjusting both based on the amount of coverage that you like on each pork chop
  • In another bowl, lightly beat the eggs and use a bit of water to thin the eggs if necessary
  • Heat a few tablespoons of olive oil and a tablespoon of butter over medium-high heat in a large skillet
  • Dredge the pork in the egg mixture coating both sides, then the bread crumb mixture on both sides, and gently place in the skillet
  • Sear the pork chops 3 minutes per side or until 145 degrees internal temperature
  • Work in batches so as not to crowd the pan and move the fully seared pork to the warmed sheet pan in the oven and continue until all is cooked
  • Transfer the pork to a serving platter or individual plates and top with the maple dijon cream sauce
