You don’t always have time to explore the newest thing or try a really hard recipe.  Sometimes you want simple and you want delicious meals that you’ve had before.  As you should know by now, living a keto or low carb lifestyle affords many of your favorites.  These super easy keto recipes are just what you need!

Whether you’re looking for keto recipes for one (the filet recipe can be cut in half!), keto family meals or just super easy keto dinner ideas, this is the post for you.  After all, what’s the easiest thing to eat on keto?  Something you know will taste soooo good and will be easy to make.

It’s no surprise that keto can be easy.  You were probably thinking protein, bacon and cheese if you’re new to keto and learning, or, if you remember when you first started.  It seems like everyone who doesn’t know thinks they know and they always parrot sentences similar to Atkins.

Of course, you can have those things (meat, bacon and cheese).  But, is that really what keto is about?  Nope.  And, thankfully so!  If it was, then my desire (and yours) to lose weight would backfire and our bodies would not thank us.

In regards to net carbs, those on the keto diet stay around 20 a day.  Of those carbs, we should be filling our bodies with veggies first.

But the friends who poo-poo the diet don’t have it entirely wrong when you want easy.  And, super easy keto recipes for beginners is a big part of the transition of this diet.  Sure, there are vegan super easy recipes that I make and do so almost weekly.  But in this post, I want to share some of the classics that I cannot live without.  Just don’t live with them daily!  Ha ha.

So, read on to learn about and try some of the protein forward or naughty (I’m specifically thinking about the warm and gooey dip below) recipes that you can and should include in your rotation.  However, do so sporadically!

Most of your net carbs should come from vegetables.  Veggies give our bodies the nutrients we need.  Along with protein and fat.

If you’re veggie forward, you’ll more than likely also stay on track with your calories.  And that means you’ll see that scale move. Yay!

Simple Keto Dinner

What does this mean to you?  To me, it means few steps, especially cooking steps, my favorite foods and something that looks great when it’s plated (because I like pretty).

All of that can be achieved with a keto friendly dinner.

Do you know what else counts as quick and easy?  Simple clean-up.  Here is your reminder to stock up on some favorites that should save time and money.


I dated a chef and I didn’t know what a silpat was until him.  You need to know about this if you don’t, and you need one in your life.  They are a replacement for parchment paper or foil when cooking on a sheet pan in the oven.  And, they can handle heat.  Are you baking toffee bark for your holiday cookie swap?  Buy this!  Are you tired of roasting veggies and they stick to foil even with a bit of oil spray?  Buy this!  You’ll save money in long run with less foil and parchment paper and you’ll feel like a kitchen pro.


I feel like everyone has a simple roasting rack for their sheet pans.  This is an important and cheap tool for when you want air to circulate under whatever you’re cooking.  Like the filet we’ll be making below.  If you haven’t “procured” one from an apartment or the classic 5 finger discount from your mom’s kitchen, well, it’s time to invest in one.  It works in the oven and also as a cooling rack.  It takes up barely any space.  Just do it!


You no doubt have a crock pot, right?  But, do you have a dutch oven?  If not, it’s time.  These babies can start on the stove and finish in the oven.  You can spend a little or a lot for these so check out the options that will work best for you.  Some of my favorite but pricey ones are Le Creuset and Staub.  The one above is reasonably priced by Lodge. They get you that sear you want on meat but still offer slow cooking qualities like a crock pot.  And, they are amazing for soups in the winter.  Speaking of, you’ll also need one of these (see below).  Best and inexpensive investment that I’ve made.  I use it non – stop!

Super Easy Keto Crockpot Recipes; 1 OF 4 RECIPES

Well, they obviously begin with a French Dip.  Who doesn’t love a French Dip?

I was thumbing through my pre-keto recipe book and came upon this recipe.

This recipe is the perfect example of why you need a dutch oven.  You begin on the stovetop and then move to the oven.

For this recipe, you can follow it exactly and it should yield 6 portions with calories at 415, carbs at 6.33.  Worcestershire is not your carb light friend.  3 Tablespoons was a whopping 10 grams of carbs.  So, if you cut this out of the recipe, you’ll reduce the carbs per portion to 4.83 which is much more desirable.  Especially as you’ll need a keto bun, some Boursin cheese and at minimum a side salad.  But I’m getting ahead of myself.

Let’s break down the recipe a bit:

First, sear your roast.  I used pre-cut portions as that’s all my store had.  I actually liked this as I could better season each piece.

Then I added all the stuff.

I then placed the dutch oven into my oven and let it cook for 2 hours.  I was worried, with the smaller pieces, that it would be too soft and broken apart  well before the suggested cooking time.  It was not.  The meat was perfect at the 2 hour mark but I wanted a bit more “softness” so I let it go for another 45 minutes.

Meanwhile, I got my keto buns and some Boursin cheese ready and I prepped a small side salad.

You don’t know what Boursin cheese is?  Buy it!  It’s low carb and found in your grocery store.  I usually buy this one, but there are other “flavors”, too!

And, order Keto Culture Hamburger Buns from Walmart.  I don’t hate them.  I don’t love them more than a freshly baked brioche bun.  But let’s face it – I’m here, and maybe you, too, because we’ve had too many freshly baked brioche buns.

Look – I’m not willing to go the rest of my life without hitting a bakery.  But I am willing to make healthy swaps, rely on whole foods and cruciferous veggies and splurge on French dips sometimes and French dips with a real carb roll ever so sporadically.
My health and my happiness matters more.  So this keto roll is everything I need today and the French dip is amazing..

Quick And Easy Keto Recipes: 2 OF 4 RECIPES

It’s time for filet, or tenderloin, or whatever you call it.  Do you think you cannot cook a restaurant quality cut of this fancy meat?  You 100 percent can.  And, it’s the easiest of the 4 keto recipes here and one of those recipes is a mix-it all & pop it in a dish kinda dip.

But, seriously, if you haven’t tried this method, you’re missing out.  And, truly the best part?  You prep this 1 – 2 days in advance and it’s on your dinner table within an hour after you get home from work.  Legit.

How bougie are you?  {At the water cooler the next day}

Co-worker to you: Oh, hey ___ (insert your name), what did you have for dinner last night?
You:  I / We made a perfect medium rare filet mignon with blue cheese compound butter and a side of asparagus.

1 pound of tenderloin.  I don’t have a boyfriend right now.  I live alone…. with cats.  So while the recipe calls for 2 pounds, I went with 1.  Seems like the right choice.  But you do you.  The recipe for 4 is below.  Double for  8 – 10 people.

Put salt, pepper, garlic powder, thyme and rosemary into a mortar pestle and grind.  Add more or less.  For me, I like salt and pepper over all surface areas and just a herb moment.  Like this.

Here’s the recipe for the easiest filet mignon you’ve ever made:

Method: You’ll want to pat dry the filet and then mix the kosher salt through the fresh rosemary in a vessel until smooth.  Next, coat all sides of the tenderloin as you see fit and place on a plate, uncovered, in the fridge for 24 – 48 hours.

When you’re ready to cook it, pre-heat the oven to 500 degrees and let the meat rest on the counter for a minimum of 1 hour.

Then cook the meat at 500 degrees for 15 minutes.  And then turn off the heat (DO NOT OPEN THE OVEN DOOR) and let it sit in the oven for 45 minutes.  A bit more if you wish for more than a medium – rare finish.

You will then remove the meat and let it rest under a lightly placed foil tent for 15 minutes.

Here’s the final look.  I want more now.  Like right now.

While the meat is developing the best crust in your life over the 24 to 48 hour period, you should making your blue cheese compound butter.  It’s also the easiest thing of your life.  Here are the 2 ingredients.

Yuuuup.  That’s it.  Let both sit out and get soft and then mix in a bowl with a bit of left over thyme and rosemary.  Put that all into a bowl and mix together.  Then spoon it out onto saran wrap in a log formation.  Roll the saran wrap around the butter and wrap the ends like salt water taffy.  Roll the butter mixture on a surface until a well formed log roll is created and pop that into the freezer.

You’ve just made your compound butter!

You’ll then slice a pad, just like butter, to top the filet when it’s ready.

Pro tip:  Chef’s use a torch, like a crème brulee torch to melt the butter a bit before the server whisks it to your table.  Try this if you want more of a melty appearance before you serve this to yourself.  Or your guest(s).

Super Easy Keto Snack Recipes; 3 OF 4 RECIPES

So you had a bad day and you want to eat your feelings.  Ok, let us do so.  But, let us stay on plan.  Here’s what the end result is.

Method:  Pre-heat oven to 350 degrees.  In a microwave safe bowl, heat the cream cheese on medium for a minute or two until it’s a very soft consistency.  You’ll then add the ranch dressing but make sure the cream cheese isn’t like lava or it will curdle the ranch.  Then mix in the sour cream through the remaining ingredients.

Put the mixture into an oven safe dish and bake for 15 minutes or until bubbly.

For aesthetics, reserve some bacon bits and chives to top the dish before serving.

Very Simple Quick And Easy Keto Dinner Recipes; 4 OF 4 RECIPES

Have you heard of McCormick & Schmick’s?  It’s a dying restaurant chain.  What isn’t dying are their Shrimp Kisses.  Here’s a copycat recipe!

Method:  De-vein the shrimp, roll a ball of cheese and place in the curve of the shrimp and wrap that baby in 1 slice of bacon.  Secure the bacon to the shrimp with a toothpick.  Here, check out this video I made on Tiktok.

You can’t tell me you don’t want to eat this.

Heat your oil, I used avocado, and fry the shrimp until the bacon is done.  If your shrimp is super large, you may need to go for a very crispy bacon appearance to ensure the center of the shrimp is cooked.  Eat this alone with a salsa type garnish or place atop a big ol’ salad.

This is also a fun and yummy appetizer when guests are around.
