Low carb cheese dishes are one of those treats you probably wait to enjoy with friends.  But did you know easy cheese dip recipes are also a fun way to use up some pantry items?

You’ve probably been the proud owner of a summer sausage if you’ve ever been the recipient of an assorted cheese basket.

According to Hempler’s, summer sausage is a type of cured meat developed in Europe before refrigeration technology.  Using several types of preservation methods at once allowed people to make a sausage that would keep from spoiling without refrigeration “in the summer months”.

That shelf-stable reason is why this beauty is often found in food gift baskets.  Especially the ones you often get around the holidays.

I was recently gifted one and normally, I would slice her up, add some cheese, and enjoy a little low-carb cracker moment.  But I always do that and it seemed boring.

There are so many ground sausage cheese dip recipes out there that I knew this had to be a good idea.  For my lazy friends out there (me, I’m lazy!), this sausage is already cooked so all you have to do is cube it into bite-size pieces.  Say less, right?

But, of course, you can use cooked ground sausage in this dip if that’s what you have.  In fact, cheese dips are a great way to use up a multitude of items that you have on hand.

Here’s what I used:

I like to get the cheese out of the way first.  I went years and years without this tool.  This is the one kitchen gadget you must have if you’re a cheese lover.  Stop buying the bags of cheese.  I promise you, this is super easy and fun to use.

Next, dice your summer sausage, a jalapeno, and 1/2 of an onion.  Bonus points if you noticed an onion was missing from the ingredients picture.  I decided to add it last minute and I’m glad I did.  The hint of onion really rounded out this cheesy dip.

Now on to the last step.  The easiest step.  In a large skillet, melt some butter and cook the sausage, jalapeno, and onion until some brown bits appear.  Next, add cream cheese.  Stir in heavy cream working the mixture until the cream cheese is fully combined.  Then, add your freshly shredded cheese and stir until fully melted.

Do you like a warm and chunky cheese dip?  The summer sausage adds some texture.  If that’s your vibe, now is the time for more add-ons.  I wanted to get rid of jarred red peppers and black olives.

What will you add?  Rotel is a great option if you’re looking for a flavor punch.  It’s so good!

This is my move 9 times out of 10.  I turn on the oven to 425 degrees around the time that I’m adding the cheese to melt.   I also put the baking sheet in the oven to warm.

Next, take your low-carb tortilla and cut it into strips.  Lightly spray each side with oil and season as you wish.  I used a little (no sugar added) taco seasoning.  Bake for 5 minutes or until crisp.

Voila – you have a low-carb cracker!  Add some broccoli for fiber and color and you now have the perfect cheese dip.

Play Around with the Flavors by Adding Different Foods to this Creamy Dish


  • 8 oz Block of Monterey Jack Cheese
  • 8 oz Block Sharp Cheddar Cheese
  • 2 T Butter
  • 10 oz Summer Sausage
  • 1/2 Small Sweet Onion
  • 1 Small Jalapeno Pepper
  • 1 T Cumin
  • Salt & Pepper, To Taste
  • 8 oz Block Cream Cheese, Softened
  • 1/2 C Heavy Whipping Cream
  • 1 C Roasted Red Peppers or Rotel
  • 1 Small Can Sliced Black Olives
  • 1 Head of Broccoli
  • 1 Package Low-Carb Tortillas
  • 2 T Taco Seasoning


  • Shred both blocks of cheese and set aside. Heat a large skillet on medium-high heat
  • Cube the summer sausage and then dice the onion and jalapeno
  • Melt the butter in the skillet and then add the sausage, onion, and jalapeno
  • Begin adding the cream cheese in blocks once the onion and jalapeno are soft and fragrant. Turn the heat down to medium -ow
  • Slowly add the heavy cream while stirring the cream cheese into the sausage and veggies.
  • Next, add the shredded cheese, roasted peppers (or Rotel), and olives stirring well to combine
  • Add a little more cream at this stage if you find the dip is too thick. Test the seasoning level and adjust as needed. Then turn the heat down to low
  • Preheat the oven to 425 degrees. Cut the low-carb tortilla into wide strips, spraying each side with a little oil, and season each side with a little taco seasoning
  • Place each tortilla strip on a baking sheet and bake for about 5 minutes or until the tortilla is crisp
  • Meanwhile, wash and cut the broccoli
  • To finish, pour the dip into a pretty vessel and add the tortilla crackers and broccoli for dipping
