We already know that turkey has less fat than beef.  That’s great news but it did cross my mind that my turkey burger could be dry because of this. Do you think that, too?  About turkey burgers?  Ask my dad, he won’t try one.  But, I have a yummy solution for that so let’s get into it!

Salad oil brings a delicious juiciness to this burger.  We’ll add it to the cooking process and a little bit to the finished product.

You’ll find salad oil in the deli section of your grocery store and it should be a staple in your pantry.  It’s now a staple in mine!  The flavored oil plus the zucchini added the proper moisture to make this ground turkey keto burger a standard in your monthly (or weekly) rotation.

We’ve covered lower saturated fat.  We’ve added veggies and salad oil for moisture.  But now we need crisp.  I’m tired of bacon.  I don’t particularly love it to begin with and I definitely hate the way my house smells after cooking it.

Fried salami.  Have you ever tried this?

I always think frying is so wasteful.  Especially since it normally involves naughty food.  Wasting oil on junk food seems like a double whammy to me.  But I wanted something crunchy to round out the turkey burger, so …..

Using 3/4 cup of oil in a deep but small pan, I let the oil heat on high.  Cook off 2 or 3 slices of salami as a snack.  They won’t be as crispy as you want but this is an important step in the process.  The oil will render the fat in the salami.  I don’t know science so I’m sure we could look up the combo of avocado oil and salami fat, but what I do know is that the next 2 pieces you fry will be absolutely perfect.

You only need 30-35 seconds and voila.  Crispy perfection.

Low-Carb Ground Turkey Burger (viral Tiktok tortilla fold method)

Servings: 7

Ingredients

Burger Sauce

  • 4 T Salad Oil
  • 2 T Red Wine Vinegar
  • 1 t Garlic Powder
  • Pinch Salt & Pepper
  • 1 T Kewpie Mayo

Burger

  • 1 1/4 C Shredded Zucchini
  • 1 # Ground Turkey
  • 2 T Italian Seasoning Try Lemon Pepper Seasoning For A Fun Twist
  • 1 T Garlic Powder
  • Salt & Pepper, To Taste
  • 1 Egg

Garnish

  • Salami Slices
  • Romaine Lettuce
  • Avocado Slices
  • Red Onion
  • Kewpie Mayo

Instructions

  • In a small bowl, mix all of the burger sauce and whisk well to combine. Adjust seasonings to taste and separate into 2 bowls
  • Preheat the oven to 400 degrees
  • In a large bowl, combine all of the burger ingredients and form 7 equal-sized patties. Place the patties into the freezer for 10 minutes
  • Meanwhile, line a baking sheet with foil. Place the burgers on the baking sheet and baste the top of each burger using 1 of the 2 bowls of the burger sauce
  • Bake the turkey burger for 10-12 minutes or until set enough to flip without compromising the integrity of the patty and then bake another 8 - 10 minutes or until the internal temperature reaches 165 degrees
  • While the turkey burgers bake, heat 3/4 cup avocado oil (or oil of your preference) in a saucepan over high heat. Fry 2 - 3 slices of salami for approximately 1 minute turning frequently allowing the fat in the salami to render into the oil. Then fry 1 - 2 pieces of salami per burger for approximately 30 to 35 seconds and let rest on a paper towel-lined plate
  • Prepare any other toppings as you wish
  • Brush the burgers with the other bowl of burger sauce and assemble your juicy ground turkey burger!
