This lazy keto chicken is one of those quick pop-it-in-the-oven kinda dinner recipes that lets you get on to other things. By other things, I mean Netflix.

If you found yourself asking this very question, well, here’s the short answer: Because doing the same thing over and over again can be boring. If you’re like me, you like to shake it up a bit and try something new.
The longer answer involves a quick trip back to my childhood. Picture it, the early 90’s, and my parents left me home alone with access to a gas grill. I loved thumbing through cookbooks and recipes on the back of “things”.
Notably, that was my Italian Dressing Era. I had it on everything. Therefore, it was no surprise that I decided to marinate some chicken in it. With this in mind, I picked up a book of recipes that a local chapter of some club my mom belonged to had put together with thick plastic rings, and inside was a recipe using dressing and mayo.
A match made in heaven! Not to mention it made the juiciest chicken I had ever grilled.

If you weren’t obsessed with ranch dressing before, you will be after making your own and you’ll ultimately discover why people are obsessed with it. Besides the low-carb count, it’s such a versatile condiment.
But there are other ways to use ranch. When was the last time you picked up a packet of dry ranch seasoning? They are super cheap and got me thinking about that Italian dressing chicken I made when I walked past a $.49 packet in Aldi’s.
Why not add a little dry seasoning to a little bit of mayo and bake the chicken? What if we sprinkled a little cajun seasoning on the chicken first?
My mind was racing, and my mouth was watering.

After all, I did promise you Netflix time.
First, grab your chicken. Omaha Steaks used to be the gift we’d give my grandparents. But now, I like to get a box every once in a while. You may want to check them out if you’re cooking for one or two – I love the pre-portioned packs.
Next, you’ll want to cross-hatch the chicken so your ooey ranch goodness can bake right in. Then you’ll season both sides with as much or as little cajun as you’d like. This inspiration came from my love for hot wings. When you order those, do you like a side of ranch or blue cheese? I go back and forth between the two, but I thought a little heat would offset the creamy top.
Finally, you’ll mix as much dry ranch seasoning as you’d like into some mayonnaise. Smear that on top of the chicken and bake until the chicken is cooked through (165 degrees).
My quick go-to side dish is always sauteed spinach with jarred garlic and crushed red peppers.
In the event that you’re not a huge fan of mayo, feel free to also add a little bit of sour cream to your ranch seasoning packet. But you don’t want your coating to be too thin. The beauty of a thicker sauce like mayo keeps all the flavors intact for that perfect bite!

Creamy Cajun Ranch Chicken
Ingredients
- 4 4-ounce Boneless Skinless Chicken Breasts
- 1 T Cajun Seasoning
- 1/4 C Mayonnaise
- 1 - 2 T Dry Ranch Seasoning
- 1 - 2 T Vegetable Oil
Instructions
- Pre-heat your oven to 350 degrees
- Cross-hatch the chicken and sprinkle both sides with the cajun seasoning
- In a bowl, mix the mayonnaise and ranch seasoning
- Add the vegetable oil to an oven-safe dish and place the chicken on top
- Smear each chicken breast with the mayo and ranch mixture. Then bake uncovered for 20 - 30 minutes or until the internal temperature of the chicken is 165 degrees
