TRADER JOE’S MAKES THE BEST EASY TO MAKE LOW CARB LUNCHES
The key to easy is having the items you need in advance.
Prep shredded chicken and then let Trader Joe’s do the heavy lifting with their fun low-carb products. Or, buy a rotisserie chicken. It truly doesn’t get much easier or delicious than this.
First, let’s get our shopping list together:
- Chicken
- Cauliflower Slims
- Buffalo Style Chicken Dip or Sour Cream Spinach Dip
- Cheese
- Optional: Spring Mix with Olive Oil, Lemon, and Salt
Next, let’s get out our favorite rapid-fire cooking machine. The air fryer. Do you have one of these yet?
LET’S MAKE A QUICK LOW CARB LUNCH
We want crispy, think a tostada. We need the keto-friendly cauliflower slim to hold the toppings. Next, we’ll add our toppings. Lastly, we’ll bake our tostada for 3 minutes and top it with a small salad if that’s your thing. I like the hot and cold combination so I always add a little salad garnish.
Let’s get into it!
- Cook the cauliflower slim in the air fryer at 400 degrees for 3 minutes
- Remove the slim (be careful, it’s hot!) and spread some of the buffalo dip on top
- Add cooked shredded chicken
- Add cheese
- Cook your “tostada” for 3 more minutes
- Top with a salad and enjoy
